Tasting Note
THE WINE WAS FERMENTED AND BARREL-AGED IN FRENCH OAK FOR A PERIOD OF 15 MONTHS. THE WINE WAS THEN BLENDED, BOTTLED, AND AGED FOR ANOTHER YEAR. THIS ךIMITED EDITION WINE IS A DEEP PURPLE WITH AN AROMA OF BLACKCURRANTS, CASSIS, BITTER-SWEET CHOCOLATE, AND HINTS OF SMOKE. IT IS FULL-BODIED WITH A LONG, WELL-BALANCED AFTERTASTE. THE WINE IS READY FOR IMMEDIATE CONSUMPTION, BUT WILL CONTINUE TO DEVELOP IN THE BOTTLE..
Food Pairing
THE WINE'S COMPLEX FLAVORS HEARTY DISHES, ESPECIALLY THOSE FEATURING RED MEAT AND STRONG CHEESES. ROAST LAMB, BEEF BOURGUIGNON. THE WINE'S COMPLEX FLAVORS ALSO COMPLEMENT DISHES WITH HERBS LIKE ROSEMARY, THYME, AND SAGE, AS WELL AS THOSE WITH NOTES OF BITTER CHOCOLATE.
Vinification
Crushing, fermentation under controlled temperature, pressing, MLF in stainless steel and oak barrels, ageing in oak barrels.
