Capçanes winery in Montsant is the very first winery in Spain to produce a kosher wine in the 20th century. Vinification
Temperature controlled fermentation (27-29ºC), maceration: 18 days, alcoholic and malo-lactic fermentation started in and finished in 1000L oak barrels, not cold stabilized, light filtration.
