Tasting Note
Dark garnet towards puple with notes of ripe black fruit, alllspice and vanilla on the nose. Medium to full-bodied with lots of black fruit flavors, cracked pepper and mocha on the finish.
Food Pairing
Grill, pasta, and cheese.
Vinification
The grapes were handpicked into small containers without compression and sorted carefully. The wine then went through a delicate soaking process to extract aroma and color, was gently pressed and transferred into a cold, mild fermentation. Each varietal was aged separately for 18 months. After mixing the different varietals, the wine rested in barrels for two additional months until it was bottled.
