Tasting Note
• FULL-BODIED AND VELVETY IN TEXTURE. • RICH FLAVORS OF DARK FRUIT (THINK PLUM/BLACKBERRY MIX) PAIRED WITH THE EARLIER SPICY/TOBACCO/LICORICE NOTES. • TANNINS ARE PRESENT BUT SMOOTH, GIVING STRUCTURE WITHOUT BEING OVERLY AGGRESSIVE. • A LONG, SPICY FINISH THAT LINGERS, WITH THE PEPPER, TOBACCO AND CHOCOLATE RETURNING
Food Pairing
BEST SERVED SLIGHTLY BELOW ROOM TEMPERATURE (~16-18 °C / ~60-65 °F) TO ALLOW THE AROMATICS TO OPEN UP. GIVEN ITS STRUCTURE AND COMPLEXITY, IT CAN BENEFIT FROM DECANTING (~30 MINUTES) BEFORE SERVING. IF THE VINTAGE ALLOWS, IT HAS POTENTIAL TO EVOLVE IN THE CELLAR FOR A FEW YEARS – THE TANNIC STRUCTURE AND OAK AGE SUGGEST THIS.
