• 100% ORGANIC, SUSTAINABLY GROWN AND HARVESTED BLUE WEBER AGAVE
• EACH AGAVE REMAINS IN THE GROUND FOR APPROXIMATELY SEVEN YEARS UNTIL REACHING FULL MATURITY AND EXTREMELY HIGH SUGAR CONTENT OF 30-40 BRIX. THESE FACTORS ARE WHAT CONTRIBUTES TO THE TEQUILAS DELICIOUS FLAVOR PROFILE
TRADITIONAL HARVESTING, PROCESSING AND COOKING THE AGAVE
• ONCE HARVESTED AT MATURITY, THE LEAVES OF THE AGAVE ARE CUT FROM THE PIÑA (AGAVE CORE)
• THE PIÑA IS THEN COOKED IN BRICK OVENS FOR 24 HOURS AND THEN LEFT TO REST IN THE OVENS FOR 12 HOURS
FERMENTATION
• EACH PIÑA IS THEN CRUSHED TO EXTRACT THE SWEET AGAVE JUICE CALLED MOSTO
• SUGAR IN THE MOSTO THEN FERMENTS INTO ALCOHOL OVER APPROXIMATELY 72 HOURS, WITHOUT USING ADDED YEAST (RARE IN THE INDUSTRY)
